Paleo Meal Plan 5

I have a couple of busy weeks at work coming up so my menus are going to focus on meals that can be doubled and easily packed and re-heated for lunch or breakfast. On Sunday I am going to make the Curry Chicken Apple Salad, grill the shrimp for the Shrimp, Avocado and Mango Salad and wash and prep all of the salad ingredients and veggies for the next few days. Then on Wednesday I am going to prep and cook the ground beef for taco salads, beef and veggie frittata, marinate and grill the chicken for the pizza and mango chicken recipes and prep the salad and veggies. I find that with one big prep day on Sunday it makes putting meals together through out the week a lot faster and hassle free. Let me know what you think!

Friday Ground beef and veggie frittata Mango Chicken with bell peppers and cauliflower rice Roasted Halibut and brussels sprouts
Saturday Ground beef and veggie frittata Ground Beef Taco Salad Thai Basil beef and stir fried veggies
