Carrot Cake Flaxseed Muffins


1 and 1/4 cup organic flax-seed (ground in food processor)
2 tsp baking powder
1 tablespoon Cinnamon
1 tsp nutmeg
1/2 tsp organic sea salt
3/4 cup Stevia or 1/2 cup organic honey
4 large organic eggs, beaten
1/4 cup coconut oil
1 tablespoon vanilla extract
1/2 cup shredded organic carrots
1/3 cup unsweetened shredded coconut
1/2 cup chopped walnuts or pecans
1/3 cup organic raisins


Preheat oven to 350 F. Place cupcake papers in 12 count muffin tin. 1. Mix the dry ingredients together, then add the rest of the ingredients, stirring by hand until  blended.Fill muffin tins evenly. Bake for 18 minutes until toothpick comes out clean.
