Orange Chicken Stir Fry

I had planned on grilling tonight but when I got back from my Friday 5k it was raining and I didn’t want to grill in the rain. I started pulling stuff out of the fridge and came up with this stir fry instead.

Orange Chicken Stir Fry


  • 4-6 chicken thighs diced (I had roasted these earlier in the week so they were ready to use)
  • 1 tablespoon coconut oil
  • 1 tablespoon pure sesame oil
  • 2 cups broccoli florets
  • 1 cup carrots, diced
  • 1 cups snow peas
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 cup cashews
  • 2-3 garlic cloves, minced
  • 1 tablespoon rice vinegar
  • 3 tablespoons honey
  • juice of 1/2 an orange
  • 2 tablespoons coconut aminos
  • 1 tablespoon arrowroot or cornstarch for thickening
  • 1-2 tablespoons Sriracha hot chile sauce (or if you have kids with a low spicy-tolerance leave this on the table for people to add-on later)


  1. Heat the coconut and sesame oils in a large skillet over medium-high heat
  2. Add the onion, brocoli and carrots and sauté for about 4 minutes
  3. Add remaining veggies and chicken and cook another 4 minutes
  4. Stir in the cashews
  5. Combine the vinegar, honey, orange juice, coconut aminos and arrowroot in a small bowl
  6. Then pour the sauce over the chicken and vegetable mixture and toss to coat
  7. Serve and enjoy!
