Pumpkin Muffins

Yesterday the kids were willing to be my guinea pigs as I tested out a new recipe. The title is for Pumpkin Muffins but they were convinced these were cupcakes and I have to agree, with a little frosting they really could pass for a light, moist and fluffy cupcake. yum!

  1. Hi Brianna! Coconut nectar is a raw, sweet syrup that comes from the coconut tree. It is a great alternative to syrup, agave, honey and sometimes sugar. It does not have a coconut taste, rather a mild sweet flavor. I buy the Coconut Secret brand at PCC and Whole Foods. Check out http://www.coconutsecret.com/nectar2.html I also love their Coconut Vinegar and Coconut Aminos (think natural, soy sauce alternative).

  2. LOVE LOVE LOVE!!! Have been meaning to make these and JUST DID! After eating Paleo for 2 weeks now, I am naturally dropping weight each day. This “treat” is devine & deserved after eating well! Thanks Marna!!!!

  3. Brianna, I am so glad you are trying Paleo and having great results, I can’t wait to hear how things go for you. Thanks for the pinterest suggestion, I will do that!
