Pumpkin Muffins

Yesterday the kids were willing to be my guinea pigs as I tested out a new recipe. The title is for Pumpkin Muffins but they were convinced these were cupcakes and I have to agree, with a little frosting they really could pass for a light, moist and fluffy cupcake. yum!

Pumpkin Muffins

This recipe is based on the recipe found here.

Ingredients:

  • 1½ cups almond flour
  • 3/4 cup  canned pumpkin
  • 3 large eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp  ground cinnamon
  • 2 tsp pumpkin pie spice
  • 1/8 tsp sea salt
  • 1/4 cup Coconut Nectar
  • 2 tsp almond butter

Directions:

  • Preheat oven to 350℉.
  • Coat muffin tins with coconut oil (or use paper muffin cups and add 1/2 tsp melted coconut oil to batter).
  • Mix all ingredients and pour evenly into tins.
  • Bake for 25 minutes on the middle rack.

  1. Hi Brianna! Coconut nectar is a raw, sweet syrup that comes from the coconut tree. It is a great alternative to syrup, agave, honey and sometimes sugar. It does not have a coconut taste, rather a mild sweet flavor. I buy the Coconut Secret brand at PCC and Whole Foods. Check out http://www.coconutsecret.com/nectar2.html I also love their Coconut Vinegar and Coconut Aminos (think natural, soy sauce alternative).
