Poached Eggs with Marinara, Spinach and Mushrooms

While I am filing this recipe in the breakfast category this would also be a great quick lunch or dinner. The flavors are savory, warm and comforting. I could eat this every day!

Serves 1

Ingredients:

  • 2 teaspoons olive oil
  • 1/4 cup diced onion
  • 1/2 cup sliced mushrooms
  • 1-2 cups spinach (depending on how much you like, I think the more the better!)
  • 1 tablespoon minced garlic
  • 1/2 cup marinara (I like Monte Bene brand – no sugar added)
  • 2 eggs

Directions:

  1. Heat the olive oil in a sauté pan over medium heat
  2. Add the onion, garlic, mushrooms and spinach
  3. Saute until soft and spinach is wilted
  4. Add the marinara sauce
  5. Gently break the eggs into the sauté pan
  6. Cover the pan, set your heat to low and simmer for 5-7 minutes
  7. Enjoy!
