Steam Sauteed Brussels Sprouts with Bacon

I am going out on a limb and declaring Brussels Sprouts as one of my all time favorite vegetables.  Kids around the world are frowning at me as I type and sticking out their tongues with an emphatic “phllllbbbbbbb”! Honestly though, I think if the would just try it (my kids included) the would LOVE it.

Ingredients

  • 6 slices bacon, cut into 1 inch chunks
  • ½ an onion, diced (I like a sweet Walla Walla or a red onion)
  • Brussels Sprouts, washed and halved
  • 1/4 cup chicken broth
  • Olive Oil
  • Salt and Pepper

Directions

  • In a large sauté pan brown the bacon and the onion over medium heat (about 5 minutes)

  • Add the Brussels Sprouts
  • Stir to combine with the bacon and onions, as needed drizzle in a little olive oil to make sure everything is coated well

Brussels Sprouts

  • Place the lid on the sauté pan, stir every 3-5 minutes to prevent sticking
  • Add the chicken stock soften the brown bits on the bottom of the pan

Cooked Brussels Sprouts

  • Brussels Sprouts are done when they are soft and tender (about 15 minutes)
