Paleo Breakfast Week: Breakfast Casserole

Friday came and went in such a flash I completely forgot to publish my post! My kids were out of school so I took the day off and had a great time with them at the children’s museum and that evening we hosted a pumpkin carving party at our house.

It was going to be such a busy day we needed a quick breakfast,  I made this breakfast casserole the night before so we could re-heat and eat. The beauty of this casserole is that the combinations are endless, here are a few ideas:

  •  ham, mushroom and spinach
  • sweet potato, red pepper, onion, diced chicken thigh and Bangkok blend seasoning
  • chicken, mushroom and asparagus
  • ham and broccoli

Breakfast Casserole


  • 1 lb ground italian sausage
  • 1 bell pepper diced (I used red in this recipe)
  • 1/2 onion diced
  • 8-10 eggs, scrambled
  • Salt and pepper for seasoning


  1. Preheat your oven to 350 degrees
  2. In a large sauté pan cook the sausage breaking it up into small chunks
  3. add red pepper and onions and cook until soft
  4. Season with salt and pepper if necessary
  5. Once the sausage is cooked and the vegetables are soft transfer to a 10×13 baking dish
  6. Bake for 30 minutes in the oven
  7. The dish will be done when the eggs are completely set and don’t jiggle in the middle
