Paleo Breakfast Week: Sauteed Zucchini, Mushrooms and Bacon (of course!)

It’s the Saturday installment of my Paleo Breakfast week series and I am a little sad that tomorrow is the last day of this series. I think breakfast has made its way into the “favorite meal” slot.

zucchini breakfast


  • 3 strips of bacon, cut into 1 inch pieces
  • 1/2 tablespoon minced garlic
  • 1 small zucchini, sliced and halved
  • 1 small summer/yellow squash, sliced and halved
  • 1/2 cup sliced mushrooms
  • Salt and Pepper


  1. In a small sauté pan cook the bacon pieces until crispy
  2. Add the garlic, zucchini and summer squash
  3. Cook until squash is soft but still crisp
  4. Season with salt and pepper
