Paleo Breakfast Week: Spinach and Mushroom Egg Scramble

I did it again! I forgot to hit publish yesterday! I must have been too excited to get out the door to go run the UW Dawg Dash with my hubs and best friend! Please forgive me.

As my Paleo Breakfast week series comes to a close I am surprised at how quickly the week has gone by, I have so many breakfast ideas I think I will continue to add a new breakfast recipe each week. I hope you have enjoyed the posts this week and that these recipes have given you some new ideas or inspiration to liven up your breakfast routine. Happy Paleo eating everyone!

egg, sausage, spinach, mushrooms


  • 1 teaspoon olive oil
  • 2 eggs, scrambled
  • 2 handfuls baby spinach
  • 1/2 cup sliced mushrooms
  • 1 teaspoon minced garlic
  • 3 oz sausage
  • salt and pepper


  1. In a small bowl scramble the eggs
  2. In a small sauté pan heat the olive oil
  3. Add the mushrooms, spinach and garlic
  4. Saute until cooked, drain any excess liquid
  5. Add the eggs to the sauté pan
  6. Let set and scramble
  7. Season with salt and pepper
